Saffron Water (Kesar Paani): How to Make It, When to Drink It, and What It Can and Cannot Do

Saffron water recipe with the right thread count, quick and overnight methods, the benefits with evidence and the ones without, and how much to drink each day.

Saffron water is six to eight saffron threads steeped in a glass of warm water for fifteen minutes, or overnight in the fridge. In India it is kesar paani, in Iran a base for sharbat, and lately it has become a wellness drink with a long list of claimed benefits. The drink itself is excellent: clear gold, faintly sweet, honeyed and floral, with no caffeine and no calories. The claims need sorting.

Everything saffron water does, it does because it is saffron. The water-soluble compounds, crocin for colour and picrocrocin for taste, dissolve fully; much of the aroma compound safranal does too. So the honest question is what saffron does, at the dose a glass delivers, and the answer is: a plausible small benefit for mood and sleep at the studied doses, and nothing at all for detox, fat burning or skin whitening. This guide gives the recipe, the variations and the evidence, in that order.

The recipe

Quick method, 15 minutes. Warm 250 ml of water to hot but not boiling. Add 6 to 8 Kashmiri saffron threads, cover, and leave 15 minutes. The water turns pale then deep gold. Drink warm, or cool it. A squeeze of lemon or a teaspoon of honey if you like, though it needs neither.

Overnight method. Put 6 to 8 threads in 250 ml of room-temperature water, cover, and refrigerate overnight. Cold steeping is slower but extracts more colour and gives a smoother, less bitter result. Drink in the morning, threads included.

Batch. Steep 25 to 30 threads in a litre of water overnight. Keeps covered in the fridge for two days; after that the aroma fades.

Good saffron releases colour gradually. If the water turns orange within seconds and the threads go pale, the saffron is dyed; see how to spot fake saffron.

Variations

Saffron and rose. A teaspoon of dried rose petals or a few drops of rosewater with the saffron, Persian style. Floral and cooling in summer.

Saffron and cardamom. One crushed green pod. The Gulf version, and very good warm.

Saffron lemonade. Overnight saffron water, juice of half a lemon, a little honey, ice and mint. One of the best summer drinks there is.

Saffron, cucumber and mint. Overnight saffron water poured over sliced cucumber and mint leaves for an hour. Spa water that is actually worth drinking.

Saffron sharbat. Simmer 200 g of sugar with 200 ml water, add 20 threads and a tablespoon of rosewater off the heat, cool. A spoonful in cold water or sparkling water is the Iranian sharbat-e za’faran.

For the hot versions, saffron tea and saffron milk have their own guides.

What saffron water can do

The clinical research on saffron used 28 to 30 mg a day, mostly as capsules, for four to twelve weeks. At that dose, small randomised trials have reported modest improvements in mild low mood, in sleep quality and in premenstrual symptoms, and some signals for eye health. Saffron benefits: what the research says goes through them.

A glass of saffron water with 8 threads contains about 16 mg of saffron, roughly half the studied dose. Two glasses a day reach it. So daily saffron water is a reasonable way to take saffron at or near the amounts that have shown effects, with the advantage that it is pleasant enough to keep up.

Mood. The best-supported effect. Expect nothing for weeks, possibly something after a month. Saffron for depression and anxiety.

Sleep. Modest improvements in sleep quality in small trials. Drink it in the evening if this is the aim. Saffron for sleep.

PMS. Two trials at 30 mg a day over two cycles. Saffron for PMS.

Antioxidant intake. Crocin is a genuine antioxidant and it is in the glass. Whether dietary antioxidants translate into health outcomes is an open question for all foods, not just saffron.

What saffron water cannot do

Detox. The liver and kidneys do that. No drink does.

Weight loss. One small trial of a saffron extract reduced snacking between meals in women over eight weeks; the effect on weight was small and the dose was a concentrated extract, not a glass of water. Saffron for weight loss looks at it honestly.

Skin whitening or a fair baby. No. Skin tone is genetic. Saffron is an antioxidant and may calm inflammation, which can make skin look brighter, but the whitening claim is false and the pregnancy version is a myth. Saffron for skin.

Who should be careful

Culinary amounts of saffron, including a daily glass of saffron water, are safe for healthy adults. Pregnant women should keep to a few threads a day and avoid saffron supplements. Anyone taking antidepressants, blood thinners or blood pressure medication, and anyone with bipolar disorder, should talk to a doctor before taking saffron daily. What it costs

Eight threads a day from a 1 g vial of about 450 threads gives roughly two months of saffron water for the price of a vial, about 35 cents a day. Keep the vial closed, dark and cool, and it holds its strength for two years. Our saffron is tested lot by lot, with the colouring strength printed on the vial; see the saffron page.

Questions people ask

What is saffron water good for?

Saffron water is simply saffron's water-soluble compounds, crocin and picrocrocin, in water, so any benefit is saffron's benefit. The clinical evidence, at 28 to 30 mg a day, concerns mild low mood, sleep quality and PMS; a glass made with 6 to 8 threads delivers about half of that. Claims that saffron water detoxes, whitens skin or burns fat have no evidence. It is a pleasant, caffeine-free, calorie-free drink with a plausible small upside.

How many saffron threads for a glass of water?

Six to eight threads in 250 ml of warm water, steeped covered for 15 minutes, or overnight in the fridge for a deeper colour. Fewer than five gives little colour; more than twelve starts to taste bitter.

Is it better to drink saffron water in the morning or at night?

Either. The traditional advice is first thing in the morning on an empty stomach, which is harmless but not evidence-based. If you want the sleep effect that trials have reported, drink it an hour before bed instead. Consistency over weeks matters more than the hour.

Can I drink saffron water every day?

Yes. Eight threads a day is about 16 mg of saffron, far below the 1.5 g daily ceiling. Pregnant women should keep to a few threads and skip supplements. If you take antidepressants or blood thinners, check with your doctor before daily use.

Does saffron water lighten skin?

No. Skin colour is genetic and no drink changes it. Saffron is an antioxidant and may modestly reduce inflammation, which some people perceive as brighter skin, but the whitening claims common in advertising are false.
