How Much Saffron to Use: Threads Per Dish, Per Cup of Milk, Per Person, With a Table

How many saffron threads for rice, biryani, paella, risotto, kheer, milk, tea and baking, per person and per dish, how to bloom it, and what too much does.

By Kashmiri Treasures · October 31, 2026 · 5 min read

Use four to five threads of saffron per person in a rice dish or dessert, four to six per cup of milk or tea, and bloom them first. That is the whole rule, and it covers almost every recipe you will cook. A generous pinch of 15 to 20 threads for four people weighs about 40 mg and costs under a dollar even at Kashmiri Mongra prices, which is why saffron is one of the cheapest things in the pot per serving despite its price per gram.

Because recipes give saffron in pinches, strands, grams and teaspoons, often for a different grade from the one in your hand, this guide puts the amounts in one table, explains how to adjust for your saffron’s strength, and covers the two ways people most often go wrong: too much, and not bloomed.

The table

Quantities are for good Category I saffron (ISO 3632 colouring strength above 200). A dried Mongra thread weighs roughly 2 mg.

Adjusting for your saffron

The table assumes strong saffron. Three things change the dose.

Grade. Mongra, super negin and coupe are stigma-only and strong. Lacha, pushal and mancha include some pale style and are weaker by weight; use a third more. Saffron grades explained maps the names.

Age. Saffron fades. A vial opened two years ago and kept above the stove may need double. If the aroma from the vial is faint, add threads. How to store saffron explains the decline.

Form. Powder is the same weight for less visible volume. A 1/16 teaspoon of real ground saffron is about 40 mg, the equivalent of the 15 to 20 thread pinch. Recipes calling for a quarter teaspoon of powder were written for a weak or cut product; start much lower. Threads vs powder.

How to bloom

Put the threads in two to four tablespoons of warm, not boiling, water, milk or stock. Cover and leave 15 to 20 minutes, until the liquid is deep gold and the threads have softened. Add the liquid, threads included, near the end of cooking so the heat does not drive off the aroma.

For rice dishes where you want streaks, drizzle the bloomed liquid over the top layer rather than stirring it through. For desserts and milk, stir it through completely. For paella and risotto, add it to the stock.

Blooming the night before in a little water and keeping it covered in the fridge gives even more colour, and is what many Persian cooks do. Two or three days is the limit before the aroma fades.

Too much saffron

The sign is bitterness. Saffron’s taste compound, picrocrocin, is pleasant at a pinch and medicinal at a spoonful, and rice overloaded with saffron turns an unappealing orange-brown. Because saffron is expensive, people tend to add more to be sure it counts, then boil it. Fewer threads, properly bloomed and added late, give more flavour than more threads thrown in dry.

If you have overdone it, dilute: more rice, more milk, more stock. A little sugar or cream softens bitterness in desserts. There is no safety concern at kitchen quantities; adults can take about 1.5 g a day before side effects appear, which is more than a whole vial. Saffron side effects covers the limits.

Too little saffron

Rarer, but it happens with weak saffron or when threads go in dry. The dish is pale and smells of nothing. Bloom a few more threads in a tablespoon of warm liquid for ten minutes and stir it in at the end; saffron added at the table still works.

What it costs per dish

A 1 g vial of Kashmiri Mongra holds roughly 400 to 500 threads. At 20 threads a dish, that is 20 to 25 dishes, or about 80 to 90 cents each at our 1 g price. A pot of saffron milk for one costs about 20 cents. Saffron is expensive per gram and cheap per plate, which is the arithmetic that makes it worth buying the good kind. Saffron price per gram has the numbers.

Questions people ask

How many saffron threads should I use per person?

Four to five threads per person in a rice dish or dessert, which is a generous pinch of 15 to 20 threads for four. In a cup of milk or tea, four to six threads per cup. These amounts assume good Category I saffron; weak or old saffron needs half as much again.

How much saffron in a glass of milk?

Four to six threads for a 250 ml glass, steeped in two tablespoons of warm milk for ten minutes before stirring into the rest. That gives an even pale gold and a clear honey aroma. Eight threads is bold; ten starts to taste bitter.

How much saffron for biryani?

For a biryani serving six to eight, 25 to 35 threads, bloomed in three or four tablespoons of warm milk for 15 minutes and drizzled over the top layer of rice before the pot is sealed. The aim is streaks of orange and white, not uniformly yellow rice.

What happens if I use too much saffron?

The dish turns bitter and medicinal, because saffron's bitter compound, picrocrocin, overtakes its honeyed notes. Rice can also go an unpleasant orange-brown. There is no safety issue at kitchen quantities; the limit for adults is about 1.5 g a day, which is more than a whole vial. Rescue an over-saffroned dish by adding more of the base, rice, milk or stock.

Can I skip blooming and add threads straight to the pot?

You can, but you waste saffron. Dry threads added directly release colour and flavour slowly and unevenly, so recipes written that way call for twice as much. Steeping the threads in a few tablespoons of warm liquid for 15 to 20 minutes extracts most of the crocin and safranal; stir the liquid in near the end of cooking.
